A game of inches
We believe progress is a game of inches. Over the past ten years we have moved, step by step, towards more organic and local products: organic cheese for over ten years, organic eggs with three Beter Leven stars (about 80,000 a year), organic coffee since 2023, and biodynamic milk from Kalverliefde since October 2023. Since that last step, more than half of everything we use is organic.
Fewer deliveries, less waste
Buying locally is a quick win. We order from each supplier once or twice a week instead of every day, and we buy based on data. Throughout our shops we have cut our waste by 75%. The ends of the tomatoes from our sandwiches go into our tomato soup, and the carrot pulp from our juices goes into our carrot cake.
Cups and plastic
Our paper cups are made from bagasse, the fibre left over after pressing sugarcane: plant-based and compostable, with about five times less CO2 than regular paper cups. Where we cannot avoid plastic, we use recycled plastic (rPET). Better still: bring your own cup.
Not perfect yet
Our goal is food without pesticides. We are not there yet, and we will not pretend everything is perfect. But we get a little better every day.
